Ingredients
  

1 lb Brussels sprouts, trimmed and halved

1 large sweet potato, peeled and diced into 1/2-inch cubes

1 red onion, sliced

2 tablespoons olive oil

1 teaspoon smoked paprika

1/2 teaspoon garlic powder

1/2 teaspoon cumin

Salt and pepper to taste

1/4 cup crumbled feta cheese (optional)

Fresh parsley, chopped for garnish

Instructions
 

Preheat your oven to 425°F (220°C).

    In a large mixing bowl, combine the halved Brussels sprouts, diced sweet potato, and sliced red onion.

      Drizzle the olive oil over the vegetables. Sprinkle in the smoked paprika, garlic powder, cumin, salt, and pepper. Toss everything together until the vegetables are well-coated in the oil and spices.

        Spread the mixture evenly on a large sheet pan. Ensure there’s enough space between the vegetables for even roasting.

          Roast in the preheated oven for about 25-30 minutes, stirring halfway through, until the Brussels sprouts are crispy and the sweet potatoes are tender.

            Once done, remove the pan from the oven and, if using, sprinkle crumbled feta cheese over the top while the hash is still warm.

              Garnish with fresh parsley before serving.
