Ingredients
  

2 slices of sourdough bread

1 cup cooked chicken, shredded

¼ cup buffalo sauce (adjust to taste)

½ cup shredded cheddar cheese

½ cup shredded mozzarella cheese

2 tablespoons cream cheese, softened

1 tablespoon butter

1 tablespoon ranch dressing (optional)

Fresh chives or green onions for garnish (optional)

Instructions
 

In a mixing bowl, combine the shredded chicken and buffalo sauce, mixing well until the chicken is fully coated.

    In another bowl, mix the cheddar cheese, mozzarella cheese, and cream cheese until well blended.

      Heat a non-stick skillet over medium heat and add 1 tablespoon of butter.

        Assemble the sandwich: spread a thin layer of ranch dressing on one side of each slice of sourdough (optional). Place one slice butter-side down in the skillet.

          Layer half of the cheese mixture on the bread, followed by the buffalo chicken mixture, and then top with the remaining cheese mixture. Finally, place the other slice of bread on top, butter-side up.

            Grill the sandwich for about 3-4 minutes until golden brown, then carefully flip it over and continue grilling for another 3-4 minutes, pressing down lightly with a spatula, until the cheese has melted and the bread is crispy.

              Remove from the skillet, slice in half, and garnish with chopped chives or green onions if desired. Serve immediately.
