Ingredients

1 medium head of green cabbage, chopped

1 lb ground beef (or turkey for a lighter option)

1 cup uncooked rice (preferably short grain)

1 large onion, diced

2 cloves garlic, minced

4 cups chicken or vegetable broth

1 (28 oz) can crushed tomatoes

1 tablespoon tomato paste

1 teaspoon paprika

1 teaspoon dried oregano

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

Fresh parsley, chopped (for garnish)

Lemon wedges (for serving)

Instructions

Prepare the Ingredients: Start by chopping the cabbage into bite-sized pieces, dicing the onion, and mincing the garlic.

Cook the Meat: In a large pot or Dutch oven, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion becomes translucent (about 3-4 minutes). Then, add the ground beef or turkey and brown it until fully cooked, breaking it apart with a spoon.

Add the Cabbage: Stir in the chopped cabbage and cook for about 5 minutes, until it begins to wilt.

Combine the Broth: Pour in the chicken or vegetable broth and the crushed tomatoes. Add the tomato paste, uncooked rice, paprika, oregano, thyme, salt, and pepper. Stir well to combine all ingredients.

Simmer the Soup: Bring the mixture to a gentle boil. Once boiling, reduce the heat to low, cover the pot, and simmer for approximately 25-30 minutes, or until the rice is tender and the flavors have melded together.

Adjust Seasonings: Taste the soup and adjust the seasoning with more salt, pepper, or herbs as desired.

Serve: Ladle the soup into bowls, garnish with fresh parsley, and serve with lemon wedges on the side for a bright finish.
