Ingredients
  

For the Cajun Shrimp:

1 lb large shrimp, peeled and deveined

2 tablespoons Cajun seasoning

2 tablespoons olive oil

3 cloves garlic, minced

1 tablespoon lemon juice

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

For the Mashed Potatoes:

2 lbs Yukon Gold potatoes, peeled and diced

1/2 cup heavy cream

4 tablespoons unsalted butter

Salt, to taste

Pepper, to taste

1/4 cup chives, finely chopped

For the Roasted Broccolini:

1 bunch broccolini, trimmed

2 tablespoons olive oil

Salt and pepper, to taste

1 teaspoon garlic powder

Zest of 1 lemon

Instructions
 

Prepare the Mashed Potatoes:

    - In a large pot, bring salted water to a boil and add the diced potatoes. Cook until fork-tender, about 15-20 minutes.

      - Drain the potatoes and return them to the pot. Add heavy cream, butter, salt, and pepper. Mash until smooth and creamy. Stir in the chives. Cover and keep warm.

        Roast the Broccolini:

          - Preheat the oven to 425°F (220°C). On a baking sheet, toss the broccolini with olive oil, salt, pepper, garlic powder, and lemon zest. Spread in a single layer.

            - Roast in the oven for 15-20 minutes until tender and slightly charred.

              Cook the Cajun Shrimp:

                - In a large skillet, heat olive oil over medium-high heat. Add minced garlic and sauté for about 1 minute until fragrant.

                  - Toss in the shrimp, Cajun seasoning, lemon juice, salt, and pepper. Cook for 2-3 minutes, until shrimp are pink and cooked through.

                    - Remove from heat and garnish with fresh parsley.

                      Assemble the Dish:

                        - On each plate, create a bed of creamy mashed potatoes. Top with the sautéed Cajun shrimp and serve alongside roasted broccolini.
