Ingredients

2 cups rolled oats

2 teaspoons baking powder

1 teaspoon ground cinnamon

½ teaspoon salt

2 cups almond milk (or any milk of choice)

½ cup maple syrup (or honey)

2 large eggs

2 tablespoons melted coconut oil (or butter)

2 teaspoons vanilla extract

2 medium apples, peeled, cored, and diced

½ cup caramel sauce (store-bought or homemade, for drizzling)

½ cup chopped walnuts or pecans (optional)

Instructions

Preheat Your Oven: Preheat the oven to 350°F (175°C) and lightly grease a 9x13-inch baking dish.

Combine Dry Ingredients: In a large bowl, mix together the rolled oats, baking powder, cinnamon, and salt until well combined.

Mix Wet Ingredients: In another bowl, whisk together the almond milk, maple syrup, eggs, melted coconut oil, and vanilla extract until smooth.

Combine Mixtures: Pour the wet ingredients into the bowl with the dry ingredients, stirring gently until just combined. Fold in the diced apples and chopped nuts (if using).

Transfer to Baking Dish: Pour the oatmeal mixture into the greased baking dish and spread it evenly.

Bake: Bake in the preheated oven for 30-35 minutes or until the top is golden brown and a toothpick inserted in the center comes out clean.

Cool and Drizzle: Allow the oatmeal bake to cool for about 10 minutes. Drizzle with caramel sauce just before serving, adding extra nuts on top if desired.

Serve Warm: Cut into squares and enjoy warm for breakfast or as a delicious snack!
