Ingredients
  

2 large carrots, grated

1 large apple (preferably a tart variety like Granny Smith), cored and thinly sliced

1/4 cup raisins or dried cranberries

1/4 cup chopped walnuts or pecans

1/4 cup plain Greek yogurt

1 tablespoon honey or maple syrup

1 tablespoon lemon juice

1/2 teaspoon ground cinnamon

Salt and pepper to taste

Fresh parsley or mint leaves for garnish (optional)

Instructions
 

Prep the Ingredients: Start by peeling and grating the carrots and then core and thinly slice the apple. If desired, soak the apple slices in lemon water for a few minutes to prevent browning, then drain.

    Mix the Dressing: In a small bowl, combine the Greek yogurt, honey (or maple syrup), lemon juice, ground cinnamon, salt, and pepper. Whisk together until smooth and well-blended.

      Combine the Salad: In a large bowl, add the grated carrots, apple slices, raisins (or dried cranberries), and chopped nuts. Gently toss to combine all the ingredients.

        Dress the Salad: Pour the yogurt dressing over the salad mixture and toss everything together until evenly coated with the dressing.

          Serve: Garnish with fresh parsley or mint leaves if desired. Serve immediately, or allow to chill in the refrigerator for about 30 minutes for flavors to meld.
