1 cup all-purpose flour

1 tsp baking powder

1/2 tsp baking soda

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1/4 tsp salt

1/2 cup granulated sugar

1/4 cup packed brown sugar

2 large eggs

1/2 cup vegetable oil

1 tsp vanilla extract

1 cup finely grated carrots (about 2 medium carrots)

1/2 cup crushed pineapple, drained

1/4 cup chopped walnuts (optional)

For the Cream Cheese Frosting:

4 oz cream cheese, softened

1/4 cup unsalted butter, softened

1 cup powdered sugar

1 tsp vanilla extract

1-2 tbsp milk (as needed for consistency)

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a donut pan with non-stick spray.

    Mix Dry Ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt until well combined.

      Combine Sugars and Wet Ingredients: In another bowl, mix the granulated sugar, brown sugar, and eggs until combined. Add the vegetable oil and vanilla extract, then whisk until smooth.

        Incorporate Grated Carrots and Pineapple: Stir in the grated carrots and crushed pineapple until evenly distributed.

          Combine Dry and Wet Mixtures: Gradually fold the dry ingredient mixture into the wet ingredients until just combined. Avoid overmixing. If using, fold in the chopped walnuts.

            Fill the Donut Pan: Use a piping bag or a spoon to fill each cavity of the donut pan about 3/4 full with batter.
