1 box (15.25 oz) carrot cake mix

1/2 cup unsalted butter, softened

2 large eggs

1/2 cup shredded coconut (optional)

1/2 cup chopped nuts (walnuts or pecans, optional)

1/2 cup raisins or chocolate chips (optional)

1 tsp vanilla extract

1/2 tsp ground cinnamon

1/4 tsp nutmeg

Pinch of salt

Powdered sugar for dusting (optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, cream together the softened butter and carrot cake mix until well combined.

      Beat in the eggs one at a time, mixing well after each addition.

        Stir in the vanilla extract, ground cinnamon, nutmeg, and a pinch of salt. Mix until fully incorporated.

          If using, fold in the shredded coconut, chopped nuts, and raisins or chocolate chips.

            Using a tablespoon or cookie scoop, drop rounded balls of dough onto the prepared baking sheet, leaving about 2 inches of space between each cookie.

              Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may still look a bit soft but will firm up as they cool.

                Remove from the oven and let the cookies cool on the pan for 5 minutes before transferring them to a wire rack to cool completely.

                  If desired, dust the cooled cookies with powdered sugar for an extra touch of sweetness.
