6 medium-sized russet potatoes, peeled and diced

8 slices of bacon, cooked and crumbled

2 cups shredded sharp cheddar cheese

1 cup milk

4 large eggs

1/2 cup sour cream

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 teaspoon smoked paprika

Green onions, sliced (for garnish)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish with cooking spray or butter.

    Prepare the Potatoes: In a large pot, bring salted water to a boil. Add the diced potatoes and cook for about 8-10 minutes, until slightly tender but still firm. Drain and set aside.

      Mix the Egg Mixture: In a large mixing bowl, whisk together the eggs, milk, sour cream, garlic powder, onion powder, salt, black pepper, and smoked paprika until well combined.

        Combine Ingredients: In a large mixing bowl, layer the cooked potatoes, crumbled bacon, and 1.5 cups of shredded cheddar cheese. Pour the egg mixture over the top and gently stir until all ingredients are coated evenly.

          Transfer to Baking Dish: Pour the potato mixture into the prepared baking dish and spread it out evenly.

            Top with Cheese: Sprinkle the remaining 1/2 cup of shredded cheddar cheese evenly over the top of the casserole.

              Bake: Place the casserole in the preheated oven and bake for 35-40 minutes, or until the top is golden brown and the eggs are set.

                Serve: Remove from the oven and let it cool for about 5 minutes. Garnish with sliced green onions before serving.
