Cheesy Beef Burritos with Crispy Fries

For the Burritos:

1 lb ground beef

1 cup shredded cheddar cheese

1 cup black beans, drained and rinsed

1 cup cooked rice (white or brown)

1 tsp taco seasoning

4 large tortillas

1 cup salsa

1/2 cup sour cream

Fresh cilantro, chopped (for garnish)

Salt and pepper, to taste

For the Crispy Fries:

4 large russet potatoes

2 tbsp olive oil

1 tsp garlic powder

1 tsp paprika

Salt and pepper, to taste

1/2 cup grated parmesan cheese (optional)

Instructions
 

Prepare the Fries:

    - Preheat your oven to 425°F (220°C).

      - Wash and peel the russet potatoes, then cut them into thin fries.

        - Place the fries in a bowl and toss with olive oil, garlic powder, paprika, salt, and pepper until well-coated.

          - Spread the fries out in a single layer on a baking sheet. Bake for 25-30 minutes, turning halfway through, until golden and crispy. If desired, sprinkle with grated parmesan cheese for the last 5 minutes of baking.

            Make the Beef Filling:

              - In a large skillet, cook the ground beef over medium heat until browned, about 7 minutes. Drain excess fat, if necessary.

                - Add the taco seasoning, black beans, and cooked rice to the skillet. Mix well and cook for an additional 3-4 minutes until heated through. Season with salt and pepper to taste. Remove from heat.

                  Assemble the Burritos:

                    - To assemble, lay a tortilla flat on a clean surface. Spoon about 1/4 of the beef mixture in the center and sprinkle with a generous amount of shredded cheddar cheese.

                      - Drizzle with salsa and add a dollop of sour cream. Fold the sides of the tortilla over the filling, then roll it up tightly from the bottom to the top.

                        - Repeat with the remaining tortillas and filling.

                          Serve:

                            - Serve the cheesy beef burritos alongside the crispy fries.

                              - Garnish with fresh cilantro, extra salsa, or sour cream on the side as desired.
