Cheesy Beef Enchilada Tortellini

2 cups cheese-filled tortellini

1 lb ground beef

1 small onion, diced

2 cloves garlic, minced

1 can (10 oz) red enchilada sauce

1 can (15 oz) black beans, drained and rinsed

1 cup corn (fresh, frozen or canned)

2 cups shredded cheddar cheese

1 teaspoon cumin

1 teaspoon chili powder

Salt and pepper, to taste

Fresh cilantro, for garnish

Sour cream, for serving (optional)

Instructions
 

Cook the Tortellini: Bring a pot of salted water to a boil. Add the cheese-filled tortellini and cook according to package instructions. Drain and set aside.

    Brown the Beef: In a large skillet over medium heat, add the ground beef. Cook for about 5 minutes, breaking it up with a spoon until it’s browned. Drain excess grease if necessary.

      Add Aromatics: Add the diced onion and minced garlic to the skillet. Sauté for an additional 3-4 minutes until the onion becomes translucent.

        Incorporate Ingredients: Add the red enchilada sauce, black beans, corn, cumin, chili powder, salt, and pepper to the skillet. Stir well to combine and let the mixture simmer for about 5 minutes.
