Ingredients
  

2 cups cooked chicken, shredded

1/2 cup buffalo wing sauce

1/2 cup ranch dressing

1 cup shredded cheddar cheese

1 cup shredded mozzarella cheese

1/2 cup diced green onions (scallions)

4 large flour tortillas

2 tablespoons olive oil

Sour cream (for serving)

Fresh cilantro or parsley for garnish (optional)

Instructions
 

Combine Chicken and Sauce: In a large mixing bowl, combine the shredded chicken, buffalo wing sauce, ranch dressing, and half of the green onions. Mix until the chicken is well coated.

    Prepare the Tortillas: Lay out two tortillas on a clean surface. On each tortilla, spread an even layer of the chicken mixture. Sprinkle half of the cheddar and mozzarella cheese evenly over the chicken.

      Top and Assemble: Place another tortilla on top of each prepared layer. Press down slightly to hold everything in place.

        Cook the Quesadillas: Heat 1 tablespoon of olive oil in a large skillet over medium heat. Carefully place one quesadilla in the skillet. Cook for about 4-5 minutes until the bottom is golden brown and the cheese is starting to melt.

          Flip and Finish: Carefully flip the quesadilla using a spatula and add another tablespoon of olive oil if needed. Cook the other side for another 4-5 minutes or until golden brown.

            Repeat: Remove the cooked quesadilla from the skillet and keep warm. Repeat the process with the remaining quesadilla.

              Slice and Serve: Cut each quesadilla into wedges and serve with sour cream, extra buffalo sauce, and a sprinkle of the remaining green onions. Garnish with fresh cilantro or parsley if desired.
