2 cups cooked chicken, shredded

1 cup cooked rice (white or brown)

1 can (10.5 oz) cream of chicken soup

1 cup sour cream

1 cup shredded cheddar cheese

1 cup frozen mixed vegetables (peas, carrots, corn)

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon paprika

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 cup breadcrumbs (optional, for topping)

Cooking spray or olive oil (for greasing the baking dish)

Instructions
 

Preheat your oven to 350°F (175°C).

    In a large mixing bowl, combine the shredded chicken, cooked rice, cream of chicken soup, sour cream, and half of the cheddar cheese. Stir until well mixed.

      Add in the frozen mixed vegetables, garlic powder, onion powder, paprika, salt, and black pepper. Mix everything together until thoroughly combined.

        Lightly grease a 9x13 inch baking dish with cooking spray or olive oil. Pour the chicken mixture into the dish and spread it out evenly.

          Sprinkle the remaining cheddar cheese on top of the casserole.

            If desired, sprinkle breadcrumbs over the cheese for added crunch.

              Cover the dish with aluminum foil and bake in the preheated oven for 25 minutes.

                After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the top is golden and bubbly.

                  Allow the casserole to cool for a few minutes before serving. Enjoy your cheesy comfort dish!
