Ingredients

2 cups cooked chicken breast, shredded or diced

1 cup mozzarella cheese, shredded

1/2 cup cream cheese, softened

4 cloves garlic, minced

1 tablespoon olive oil

1 teaspoon Italian seasoning

Salt and pepper to taste

4 large flour or whole wheat tortillas

1 cup fresh spinach leaves

1/2 cup sun-dried tomatoes, chopped (optional)

Fresh parsley or basil for garnish

Instructions

Prepare the Chicken Mixture: In a large mixing bowl, combine the cooked chicken, mozzarella cheese, cream cheese, minced garlic, olive oil, Italian seasoning, salt, and pepper. Mix well until all ingredients are fully incorporated and the mixture is creamy.

Warm the Tortillas: Heat a skillet over medium heat. Place each tortilla in the skillet for 30 seconds on each side, just until warm and pliable. Remove from heat.

Assemble the Wraps: Lay a tortilla flat on a clean surface. Spoon a generous portion of the chicken mixture onto the center of the tortilla. Add a handful of fresh spinach leaves and a few pieces of sun-dried tomatoes if using.

Wrap it Up: Fold in the sides of the tortilla and then roll from the bottom up, making sure the filling is tucked in tightly. Repeat for the remaining tortillas and filling.

Grill the Wraps: In the same skillet, add a little olive oil if needed. Place the wrapped tortillas seam-side down onto the skillet and grill for about 2-3 minutes per side, or until golden brown and crispy.

Serve: Remove from the skillet, slice in half diagonally, and garnish with fresh parsley or basil. Serve warm and enjoy!
