1 can (15 oz) of mixed beans (cannellini, kidney, black beans)

1 cup shredded cheddar cheese

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon ginger, grated

1 green chili, finely chopped (adjust to taste)

1 teaspoon cumin powder

1 teaspoon garam masala

½ teaspoon turmeric powder

½ teaspoon chili powder (optional)

Salt to taste

Fresh cilantro, chopped (for garnish)

4 slices of your favorite bread (whole grain, sourdough, etc.)

Butter (for toasting the bread)

Instructions
 

Prepare the Beans: Drain and rinse the mixed beans under cold water. Set aside.

    Sauté Aromatics: In a skillet, heat olive oil over medium heat. Add chopped onions and sauté until they become translucent, about 3-4 minutes. Stir in garlic, ginger, and green chili, continuing to sauté for another minute until fragrant.

      Spice it Up: Add cumin powder, garam masala, turmeric powder, and chili powder (if using) to the skillet. Stir well to combine the spices with the aromatics.

        Add Beans: Incorporate the rinsed beans into the skillet. Gently stir to coat the beans with the spice mixture. Cook for about 5-7 minutes, allowing the flavors to meld. If the mixture seems too dry, add a splash of water.

          Cheesy Goodness: Once heated through, remove the skillet from heat and stir in half of the cheddar cheese, mixing until melted and combined. Taste and adjust salt if necessary.

            Toast the Bread: While the beans are cooking, butter each slice of bread on one side. Toast them on a pan or in a toaster until golden brown and crispy.

              Assemble: Top each slice of toasted bread with a generous scoop of the cheesy masala beans. Sprinkle the remaining cheddar cheese on top.

                Final Touch: Optional – Place the loaded toast under a broiler for a couple of minutes until the cheese is bubbly and slightly browned. Remove and garnish with chopped cilantro.
