Ingredients
  

  • 4 cups diced potatoes
  • 1 cup shredded sharp cheddar cheese
  • 1 cup diced cooked ham
  • ½ cup chopped green onions
  • 6 large eggs
  • 1 cup milk
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • ½ teaspoon freshly ground black pepper
  • ½ teaspoon smoked paprika

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a large bowl, combine diced potatoes, cooked ham, half of the cheddar cheese, and half of the green onions.
  • In a separate bowl, whisk together eggs, milk, garlic powder, salt, black pepper, and smoked paprika.
  • Pour the egg mixture over the potato and ham mixture, stirring gently.
  • Grease a 9x13 inch baking dish and transfer the mixture into it, spreading evenly.
  • Top with the remaining cheddar cheese.
  • Cover with aluminum foil and bake for 30 minutes.
  • Remove the foil and bake for an additional 15-20 minutes until golden brown.
  • Allow to cool for 5-10 minutes before slicing.
  • Garnish with remaining green onions before serving.
