2 cups fresh or frozen cherries, pitted and halved

1 cup granulated sugar

1/2 cup water

1 tablespoon lemon juice

1 teaspoon vanilla extract

1 tablespoon cornstarch (optional for thickening)

1 tablespoon cold water (optional for cornstarch)

Pinch of salt

Instructions
 

In a medium saucepan, combine the cherries, sugar, water, lemon juice, and a pinch of salt. Stir well to combine, and bring the mixture to a gentle boil over medium heat.

    Once boiling, reduce the heat to low and let it simmer for about 10 minutes. Stir occasionally, allowing the cherries to soften and release their juices.

      If you desire a thicker sauce, take the tablespoon of cornstarch and mix it with a tablespoon of cold water to create a slurry. After the cherries have simmered, stir in the cornstarch mixture.

        Increase the heat slightly and continue to cook for an additional 2-3 minutes, stirring constantly until the sauce thickens and becomes glossy.

          Remove the saucepan from heat and stir in the vanilla extract. Allow the sauce to cool slightly before serving.

            For a smoother consistency, you can blend the sauce with an immersion blender, or simply leave it chunky for texture.

              Serve warm or chilled over pancakes, ice cream, cheesecake, or your favorite dessert!
