Chicken and Bacon Creamed Corn

2 cups fresh or frozen corn (about 4 ears if fresh)

1 cup cooked chicken, shredded or diced

4 strips of bacon, chopped

1 cup heavy cream

1 cup chicken broth

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon paprika

1 teaspoon onion powder

Salt and pepper to taste

2 tablespoons fresh parsley, chopped (for garnish)

1 tablespoon butter

½ cup grated Parmesan cheese (optional)

Instructions
 

Cook the Bacon: In a large skillet over medium heat, cook the chopped bacon until crispy. Remove the bacon from the skillet, leaving the drippings behind. Set the bacon aside on paper towels to drain.

    Sauté the Aromatics: In the same skillet with the bacon drippings, add the butter. Once melted, add the chopped onion and cook until it becomes translucent, about 3-4 minutes. Stir in the minced garlic and cook for an additional 30 seconds.

      Add Corn and Chicken: Mix in the corn (fresh or frozen) and diced chicken. Sauté for about 5 minutes until the corn is heated through.

        Create the Creamy Base: Pour in the heavy cream and chicken broth. Stir well to combine. Add paprika, onion powder, salt, and pepper. Allow the mixture to come to a simmer.

          Thicken the Sauce: Let the mixture simmer gently for about 10 minutes, stirring occasionally. If you prefer a thicker sauce, you can add grated Parmesan cheese at this point, stirring until melted and smooth.

            Finish with Bacon: Return the cooked bacon to the skillet and stir it through the cream corn mixture. Allow it to heat for another 2-3 minutes to incorporate the flavors.

              Serve: Once everything is heated through and the sauce is to your desired thickness, remove from heat. Garnish with fresh parsley before serving.
