2 boneless, skinless chicken breasts

1 ripe avocado, mashed

1 cup shredded cheddar cheese

4 slices of whole grain bread

1 small red onion, thinly sliced

1 medium tomato, sliced

2 tablespoons mayonnaise

1 tablespoon Dijon mustard

1 teaspoon garlic powder

Salt and pepper to taste

Fresh arugula or spinach leaves

Olive oil for cooking

Cook the Chicken: Season the chicken breasts with salt, pepper, and garlic powder. Heat a skillet over medium heat with a drizzle of olive oil. Cook the chicken for 5-7 minutes on each side or until golden brown and cooked through (internal temperature should reach 165°F). Remove from heat and let rest for a few minutes, then slice thinly.

    Prepare the Avocado Spread: In a small bowl, mash the ripe avocado. Add mayonnaise, Dijon mustard, salt, and pepper to taste. Mix well until creamy and smooth.

      Assemble the Sandwich: Spread a generous layer of the avocado mixture on two slices of whole grain bread. Top with sliced chicken, a sprinkle of shredded cheddar cheese, sliced red onion, tomato, and a handful of arugula. Place another slice of bread on top to form a sandwich.
