2 slices of whole grain or sourdough bread

1 cup cooked chicken breast, shredded or sliced

1 ripe avocado, mashed

1/4 cup Greek yogurt (or mayonnaise for a richer flavor)

1 tablespoon fresh lemon juice

1/4 teaspoon garlic powder

1/4 teaspoon salt

1/4 teaspoon black pepper

1/4 cup shredded mozzarella cheese

1/4 cup sliced tomatoes

Handful of fresh spinach or arugula

Butter, for spreading onto the bread

Instructions
 

Prepare the Avocado Spread: In a medium bowl, combine the mashed avocado, Greek yogurt (or mayonnaise), lemon juice, garlic powder, salt, and black pepper. Mix until smooth and well combined.

    Assemble the Sandwich: On one slice of bread, spread a generous layer of the avocado mixture. Top with the shredded chicken, then layer the sliced tomatoes, spinach or arugula, and finish with the mozzarella cheese.

      Top with another Slice: Place the second slice of bread on top, pressing down gently to compact the sandwich.

        Toast the Sandwich: In a skillet over medium heat, melt a small pat of butter. Once melted, place the sandwich in the skillet. Cook for 3-4 minutes, or until the bottom is golden brown.
