2 cups cooked shredded chicken

1 cup refried beans

1/2 cup shredded cheese (cheddar or Mexican blend)

1/4 cup diced onion

1/4 cup diced bell pepper

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon chili powder

Salt and pepper to taste

4 large flour tortillas

Oil for frying (vegetable or canola)

Sour cream and guacamole for serving

Fresh cilantro for garnish (optional)

Prepare the Filling: In a large mixing bowl, combine the cooked shredded chicken, refried beans, shredded cheese, diced onion, diced bell pepper, minced garlic, ground cumin, chili powder, salt, and pepper. Mix well until all ingredients are evenly incorporated.

    Assemble the Chimichangas: Lay one flour tortilla flat on a clean surface. Spoon about 1/2 cup of the chicken filling onto the center of the tortilla. Fold in the sides and then roll the tortilla tightly from the bottom up to enclose the filling. Secure with a toothpick if necessary. Repeat with the remaining tortillas and filling.

      Heat the Oil: In a large skillet or frying pan, pour in oil to a depth of about 1 inch. Heat over medium-high heat until the oil is hot (around 350°F or 175°C).

        Fry the Chimichangas: Carefully place 2-3 chimichangas in the hot oil, seam side down. Fry for about 3-4 minutes on each side, or until golden brown and crispy. Use tongs to turn them as needed. Remove the chimichangas and drain on paper towels. Repeat with the remaining chimichangas.

          Serve: Serve the chimichangas hot, topped with sour cream and guacamole. Garnish with fresh cilantro if desired.
