Chicken Chow Mein with The Best Chow Mein Sauce

Ingredients
  

1 lb boneless, skinless chicken breast, thinly sliced

2 tablespoons soy sauce

1 tablespoon cornstarch

2 tablespoons vegetable oil

3 cups mixed vegetables (bell peppers, carrots, snap peas, and bean sprouts)

2 cloves garlic, minced

1 teaspoon ginger, minced

4 green onions, chopped

2 nests of chow mein noodles (or 8 oz lo mein noodles)

For the Best Chow Mein Sauce:

3 tablespoons soy sauce

2 tablespoons oyster sauce

1 tablespoon hoisin sauce

1 tablespoon sesame oil

2 teaspoons sugar

1/2 cup chicken broth

Instructions
 

Marinate the Chicken:

    In a bowl, combine sliced chicken breast with 2 tablespoons of soy sauce and 1 tablespoon of cornstarch. Mix well and let it marinate for at least 15 minutes.

      Prepare the Chow Mein Sauce:

        In a small bowl, whisk together 3 tablespoons soy sauce, oyster sauce, hoisin sauce, sesame oil, sugar, and chicken broth. Set aside.

          Cook the Noodles:

            Cook the chow mein or lo mein noodles according to package instructions. Drain and set aside.

              Stir-Fry the Chicken:

                Heat a large skillet or wok over medium-high heat and add 2 tablespoons of vegetable oil. When the oil is hot, add the marinated chicken. Stir-fry for about 5-7 minutes, until the chicken is cooked through and slightly golden. Remove the chicken from the skillet and set aside.

                  Sauté Vegetables:

                    In the same skillet, add a little more oil if needed. Add minced garlic and ginger, and stir-fry for about 30 seconds until fragrant. Then, add the mixed vegetables and stir-fry for another 3-4 minutes until they are tender yet crisp.

                      Combine Everything:

                        Return the cooked chicken to the skillet with the vegetables. Add the cooked noodles and pour the chow mein sauce over the top. Toss everything together to ensure the noodles, chicken, and veggies are well coated in the sauce.

                          Final Touches:

                            Add chopped green onions and mix well. Cook for an additional minute until everything is heated through.

                              Serve:

                                Serve hot, garnished with additional green onions or sesame seeds, if desired.
