Chicken Ramen Stir Fry (30 minutes)

Ingredients
  

2 packs of instant ramen noodles (discard flavor packets)

1 lb (450g) chicken breast, thinly sliced

2 tbsp soy sauce

1 tbsp sesame oil

1 tbsp vegetable oil

3 cloves garlic, minced

1 inch ginger, grated

1 bell pepper, thinly sliced (any color)

1 cup snap peas

2 green onions, sliced

2 large eggs, lightly beaten

1 tbsp oyster sauce (optional)

Salt and pepper, to taste

Sesame seeds for garnish

Instructions
 

Cook the Noodles: Bring a pot of water to a boil. Add the ramen noodles and cook according to package instructions (about 3-4 minutes). Drain and set aside.

    Prepare the Chicken: In a bowl, marinate the sliced chicken breast with 1 tablespoon of soy sauce and a pinch of salt. Let it sit while you prepare the vegetables.

      Heat the Pan: In a large skillet or wok, heat the vegetable oil over medium-high heat. Once hot, add the marinated chicken. Stir-fry for about 5-7 minutes until the chicken is cooked through and slightly golden. Remove the chicken from the skillet and set aside.

        Stir-Fry Vegetables: In the same skillet, add the sesame oil. Sauté the minced garlic and grated ginger for about 30 seconds until fragrant. Then, add the bell pepper and snap peas. Stir-fry for another 3-4 minutes until the vegetables are tender-crisp.

          Combine Ingredients: Return the cooked chicken to the skillet with the vegetables. Stir in the cooked ramen noodles, remaining 1 tablespoon of soy sauce, and oyster sauce if using. Toss everything together until well-combined and heated through.

            Add Eggs: Push the noodle mixture to one side of the skillet. Pour the beaten eggs into the other side and scramble them until just set. Once done, mix the eggs into the noodle mixture.

              Finish and Serve: Season with salt and pepper to taste. Remove from heat and garnish with sliced green onions and sesame seeds. Serve hot and enjoy!
