Ingredients

1 lb chicken sausage, cut into 1-inch pieces (your choice of flavor)

2 tablespoons honey

1 tablespoon Dijon mustard

1 tablespoon olive oil

1 teaspoon smoked paprika

1 teaspoon garlic powder

Salt and pepper, to taste

1 bell pepper, cut into 1-inch pieces (any color)

1 red onion, cut into wedges

Skewers (wooden or metal)

Instructions

Preheat the Grill: Preheat your grill or grill pan over medium heat.

Make the Marinade: In a bowl, whisk together honey, Dijon mustard, olive oil, smoked paprika, garlic powder, salt, and pepper until well combined.

Prepare the Skewers: If you're using wooden skewers, soak them in water for about 30 minutes to prevent burning.

Assemble Skewers: Thread the chicken sausage pieces, bell pepper chunks, and red onion wedges onto the skewers, alternating between sausage and vegetables.

Marinate: Brush the skewers with the honey mustard marinade, ensuring they are evenly coated. Let them marinate for about 10-15 minutes.

Grill: Place the skewers on the preheated grill. Cook for about 10-15 minutes, turning occasionally, until the sausage is heated through and has grill marks.

Serve: Remove from the grill and let cool slightly. Drizzle any remaining marinade over the skewers before serving. Enjoy!
