8 oz linguine or spaghetti

2 tablespoons olive oil

1 pound boneless, skinless chicken breasts, sliced into thin strips

4 cloves garlic, minced

1/2 teaspoon red pepper flakes (adjust to taste)

1/2 cup dry white wine (such as Sauvignon Blanc)

1 cup chicken broth

1 lemon, juiced and zested

1/2 cup heavy cream

1/2 cup grated Parmesan cheese

1 tablespoon fresh parsley, chopped

Salt and pepper to taste

Optional: Lemon wedges and additional parsley for serving

Instructions
 

Cook the Pasta: In a large pot of boiling salted water, cook the linguine or spaghetti according to package instructions until al dente. Drain and set aside.

    Sauté the Chicken: In a large skillet, heat the olive oil over medium-high heat. Add the sliced chicken and season with salt and pepper. Cook until browned and cooked through, about 5-6 minutes. Remove the chicken from the skillet and set aside.

      Prepare the Scampi Sauce: In the same skillet, add the minced garlic and red pepper flakes, cooking for about 1 minute until fragrant. Pour in the white wine, scraping up any brown bits from the bottom of the pan. Let the wine simmer for 2-3 minutes to reduce slightly.

        Add Broth & Cream: Stir in the chicken broth and bring it to a simmer. Let it cook for another 2 minutes, then reduce the heat to low and slowly whisk in the heavy cream, lemon juice, and lemon zest.

          Combine Everything: Add the cooked chicken back into the skillet along with the drained pasta. Toss everything together until well coated with the sauce. Stir in the grated Parmesan cheese and chopped parsley, adjusting salt and pepper to taste.

            Serve: Plate the Chicken Scampi Pasta hot, garnished with additional parsley and lemon wedges if desired. Enjoy!
