Ingredients
  

1 pound elbow macaroni

1 pound ground beef or turkey

1 can (15 oz) kidney beans, drained and rinsed

1 can (15 oz) black beans, drained and rinsed

1 can (14 oz) diced tomatoes, with juices

1 can (8 oz) tomato sauce

1 small onion, finely chopped

2 cloves garlic, minced

2 tablespoons chili powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and pepper to taste

2 cups shredded cheddar cheese

½ cup sour cream (optional for garnish)

Fresh cilantro, chopped (optional for garnish)

1 tablespoon olive oil

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the elbow macaroni according to package instructions until al dente. Drain and set aside.

    Cook the Meat: In a large skillet over medium heat, heat the olive oil. Add the chopped onion and minced garlic, sautéing until the onions are translucent (about 3-4 minutes).

      Brown the Meat: Add the ground beef (or turkey) to the skillet. Break it up with a spatula and cook until it's browned and fully cooked (about 5-7 minutes). Drain excess fat if necessary.

        Add Seasonings: Stir in the chili powder, cumin, smoked paprika, salt, and pepper, mixing well to combine the flavors.

          Combine Ingredients: Add the diced tomatoes, tomato sauce, kidney beans, and black beans to the meat mixture. Stir well and let it simmer for about 10 minutes on low heat.

            Mix with Pasta: Add the cooked macaroni to the skillet, tossing everything together until the macaroni is well coated with the chili mixture.

              Cheesy Finish: Sprinkle 1 cup of shredded cheddar cheese over the top of the chili mac. Stir to combine, and then let it heat through for an additional 2-3 minutes until the cheese is melted.

                Serve: Remove the skillet from heat. Top with the remaining cheese, then serve hot with a dollop of sour cream and a sprinkle of fresh cilantro if desired.
