Ingredients
  

1 lb flank steak

2 tablespoons chipotle chili powder

1 teaspoon garlic powder

1 teaspoon cumin

1 teaspoon smoked paprika

Salt and black pepper to taste

1 tablespoon olive oil

4 large flour tortillas

2 cups shredded Monterey Jack cheese

1 cup diced bell peppers (mixed colors)

1 cup diced red onion

Fresh cilantro for garnish

Sour cream and salsa for serving

Instructions
 

Marinate the Steak: In a bowl, combine chipotle chili powder, garlic powder, cumin, smoked paprika, salt, and pepper. Rub the spice mixture all over the flank steak, ensuring it's well-coated. Let it marinate for at least 30 minutes (or up to 2 hours in the refrigerator for deeper flavor).

    Cook the Steak: In a skillet over medium-high heat, add olive oil. Once hot, add the marinated steak and cook for about 4-5 minutes on each side for medium-rare, or until desired doneness. Remove from heat and let it rest for 5 minutes. Slice the steak thinly against the grain.

      Prepare the Quesadillas: In the same skillet, reduce the heat to medium. Place a tortilla in the skillet, and sprinkle half of the cheese evenly over one half of the tortilla. Top with a portion of sliced steak, bell peppers, red onion, and another sprinkle of cheese. Fold the tortilla in half.

        Cook the Quesadilla: Cook for about 3-4 minutes on one side until golden brown and crispy, then carefully flip and cook for another 3-4 minutes on the other side until the cheese is melted. Repeat with the remaining tortillas and filling.

          Serve: Remove the quesadillas from the skillet and cut them into wedges. Garnish with fresh cilantro and serve with sour cream and salsa on the side.
