Ingredients

2 ripe bananas, mashed

1/2 cup unsalted butter, melted

1/2 cup brown sugar, packed

1/4 cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup all-purpose flour

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup old-fashioned oats

1/2 cup semi-sweet chocolate chips

1/4 cup chopped walnuts (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking pan or line it with parchment paper for easy removal.

Mix Wet Ingredients: In a large mixing bowl, combine the mashed bananas and melted butter. Stir in the brown sugar and granulated sugar until well blended. Add the egg and vanilla extract, mixing until combined.

Combine Dry Ingredients: In a separate bowl, whisk together the flour, baking soda, and salt. Gradually add the dry ingredients to the banana mixture, stirring until just combined. Do not overmix.

Add Oats and Chocolate Chips: Fold in the oats and semi-sweet chocolate chips (and walnuts if using) until evenly distributed throughout the batter.

Bake the Bars: Pour the batter into the prepared baking pan, spreading it evenly. Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Cool and Serve: Allow the bars to cool in the pan on a wire rack for about 10 minutes. Once cooled, gently lift them out of the pan (if using parchment paper) and cut into squares. Enjoy warm or at room temperature!
