12 large Medjool dates

1 cup whole almonds (raw or roasted)

1 cup dark chocolate chips (or chopped dark chocolate)

1 tablespoon coconut oil (optional, for smooth melting)

Sea salt (for sprinkling)

Optional toppings: crushed pistachios or shredded coconut for garnish

Prep the Dates: Start by carefully slicing each date lengthwise on one side without cutting all the way through. Remove any pits, if necessary. Open the date slightly to create a pocket for the almond.

    Stuff with Almonds: Take one almond and place it inside each date's pocket. Gently press it closed to secure the almond inside.

      Melt the Chocolate: In a microwave-safe bowl, add the dark chocolate chips and coconut oil (if using). Microwave in 30-second intervals, stirring after each interval until fully melted and smooth.

        Dip the Dates: With a fork, dip each stuffed date into the melted chocolate. Ensure it’s completely coated, then let any excess chocolate drip off.
