For the Crust:

1 ½ cups chocolate cookie crumbs

½ cup unsalted butter, melted

2 tablespoons granulated sugar

For the Cheesecake Layer:

16 oz cream cheese, softened

1 cup granulated sugar

2 large eggs

1 teaspoon vanilla extract

½ cup sour cream

½ cup heavy cream

For the Chocolate Mousse Layer:

6 oz dark chocolate, chopped

2 tablespoons unsalted butter

1 ½ cups heavy whipping cream

¼ cup powdered sugar

1 teaspoon vanilla extract

For Garnish:

Chocolate shavings or curls

Whipped cream

Fresh berries (optional)

Instructions
 

Prepare the Crust:

    - Preheat your oven to 350°F (175°C).

      - In a medium bowl, combine the chocolate cookie crumbs, melted butter, and granulated sugar. Mix until well combined.

        - Press the mixture firmly into the bottom of a 9-inch springform pan to form the crust. Bake for 10 minutes, then let it cool completely while you prepare the cheesecake filling.

          Make the Cheesecake Layer:

            - In a large mixing bowl, beat the softened cream cheese and granulated sugar together until smooth and creamy, about 3–5 minutes.

              - Add the eggs one at a time, mixing well after each addition. Then, stir in the vanilla extract and sour cream until fully incorporated.

                - Pour the cheesecake mixture onto the cooled crust and smooth the top with a spatula.

                  - Bake in the preheated oven for 45 minutes, or until the center is set but slightly jiggly.

                    - Turn off the oven, crack the door open, and let the cheesecake cool inside for 1 hour. Then chill in the refrigerator for at least 4 hours or overnight.

                      Prepare the Chocolate Mousse Layer:

                        - Melt the chopped dark chocolate and unsalted butter together in a double boiler or microwave, stirring until smooth. Set aside to cool slightly.

                          - In a separate bowl, whip the heavy cream until soft peaks form. Gradually add in powdered sugar and vanilla extract, continuing to whip until stiff peaks form.

                            - Gently fold the cooled chocolate mixture into the whipped cream until thoroughly combined, being careful not to deflate the mousse.

                              Assemble the Cake:

                                - Once the cheesecake layer is well chilled, spread the chocolate mousse evenly on top of the cheesecake.

                                  - Chill the entire cake in the refrigerator for at least 2 more hours to set the mousse.

                                    Serve:

                                      - Once set, carefully remove the sides of the springform pan.

                                        - Garnish with chocolate shavings or curls, and optionally, add a dollop of whipped cream and fresh berries.
