Chorizo Egg Bake

Ingredients
  

8 large eggs

1 cup whole milk

1 cup chorizo sausage, casings removed

1 medium onion, diced

1 red bell pepper, diced

2 cloves garlic, minced

1 cup shredded cheddar cheese

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh cilantro, chopped (for garnish)

Olive oil (for cooking)

Instructions
 

Preheat your oven to 350°F (175°C) and lightly grease a large baking dish (9x13 inches) with olive oil.

    In a skillet over medium heat, add the chorizo. Cook until browned and cooked through, about 5-7 minutes, breaking it up with a spoon as it cooks.

      Remove the chorizo from the skillet and set it aside. In the same skillet, add a little olive oil if needed, then sauté the diced onion and red bell pepper until soft, approximately 5 minutes. Add minced garlic and cook for another 1-2 minutes until fragrant.

        In a large mixing bowl, whisk together the eggs and milk until well combined. Season with smoked paprika, salt, and pepper.

          Add the cooked chorizo, sautéed vegetables, and half of the shredded cheddar cheese to the egg mixture. Stir gently to combine.

            Pour the egg mixture into the prepared baking dish. Top with the remaining cheddar cheese.

              Bake in the preheated oven for 35-40 minutes, or until the eggs are fully set and lightly golden on top.

                Once baked, let it cool slightly. Garnish with freshly chopped cilantro before serving.
