Ingredients

6 cups day-old brioche or challah bread, cubed

4 large eggs

3 cups whole milk

1 cup heavy cream

1 cup granulated sugar

1 tablespoon vanilla extract

1 tablespoon ground cinnamon

1/2 teaspoon ground nutmeg

1/4 teaspoon salt

1/2 cup raisins (optional)

1/2 cup chopped walnuts or pecans (optional)

Powdered sugar for dusting (optional)

Whipped cream or vanilla ice cream for serving (optional)

Instructions

Prepare the Bread: Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the cubed brioche or challah bread with raisins and nuts if using. Transfer the mixture to a lightly greased 9x13 inch baking dish.

Make the Custard: In another bowl, whisk together the eggs, milk, heavy cream, granulated sugar, vanilla extract, cinnamon, nutmeg, and salt until everything is well combined.

Combine: Pour the custard mixture evenly over the bread cubes, ensuring all the bread is soaked. Press down gently with a spatula to help the bread absorb the liquid.

Chill: Allow the mixture to sit for about 10-15 minutes to let the bread fully soak up the custard.

Bake: Place the baking dish in the preheated oven and bake for 45-55 minutes, or until the center is set and the top is golden brown. You can insert a knife into the center; if it comes out clean, it’s done.

Cool and Serve: Once out of the oven, let the bread pudding cool for 10 minutes. Dust with powdered sugar if desired, and serve warm with whipped cream or a scoop of vanilla ice cream.
