Ingredients

6 slices of thick bread (Brioche or Challah recommended), diced

4 large eggs

1 cup whole milk

1/4 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon salt

1/2 cup chopped nuts (optional, pecans or walnuts)

1/2 cup maple syrup for drizzling (optional)

For the Cinnamon Sugar Coating:

1/3 cup granulated sugar

1 tablespoon ground cinnamon

4 tablespoons unsalted butter, melted

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C). Grease a muffin tin with non-stick spray or butter.

Prepare the Bread: In a large bowl, add the diced bread. This will absorb all the delicious custard mixture.

Make the Custard Mixture: In another bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, ground cinnamon, and salt until well combined.

Combine: Pour the custard mixture over the diced bread. Gently stir to ensure all the bread pieces are soaked. If using, fold in the chopped nuts.

Fill the Muffin Tin: Spoon the soaked bread mixture evenly into each muffin cup, filling them about 3/4 full.

Bake: Place the muffin tin in the preheated oven and bake for 20-25 minutes, or until the tops are golden brown and a toothpick inserted in the center comes out clean.

Cinnamon Sugar Coating: While the muffins are baking, mix the granulated sugar and ground cinnamon in a small bowl. Set aside.

Coat the Muffins: Once muffins are out of the oven, immediately brush the tops with melted butter and sprinkle the cinnamon sugar mixture generously over each muffin while they are still warm.

Serve: Allow the muffins to slightly cool. Drizzle with maple syrup if desired before serving.

Enjoy these deliciously sweet and spiced Cinnamon Sugar French Toast Muffins for breakfast or as a delightful snack!
