1 loaf of brioche bread, cut into small cubes

4 large eggs

1 cup milk

1/2 cup granulated sugar

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 teaspoon salt

1/4 cup melted butter

1/2 cup brown sugar (for topping)

1 tablespoon ground cinnamon (for topping)

Maple syrup (for serving, optional)

Instructions
 

Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease lightly.

    In a large bowl, whisk together the eggs, milk, granulated sugar, vanilla extract, ground cinnamon, nutmeg, and salt until well combined.

      Add the brioche bread cubes to the egg mixture, stirring gently to make sure all the pieces are soaked. Let the mixture rest for about 10 minutes to absorb the flavors.

        In a separate small bowl, combine the brown sugar and ground cinnamon for the topping. Set aside.

          Divide the soaked brioche mixture evenly among the muffin cups, filling each cup about 3/4 full.

            Drizzle the melted butter evenly over the muffins, then sprinkle the cinnamon sugar topping generously over each muffin.

              Bake in the preheated oven for 18-20 minutes, or until the tops are golden and a toothpick inserted comes out clean.

                Allow the muffins to cool slightly in the pan for about 5 minutes before transferring them to a wire rack.

                  Serve warm with maple syrup drizzled on top, if desired.
