Ingredients

For the filling:

4 large ripe peaches, peeled and sliced

1 cup granulated sugar

1 teaspoon ground cinnamon

1 tablespoon lemon juice

1 tablespoon cornstarch

1 teaspoon vanilla extract

For the topping:

1 cup all-purpose flour

1 cup granulated sugar

2 teaspoons baking powder

1/2 teaspoon salt

1 cup whole milk

1/2 cup unsalted butter, melted

1 teaspoon vanilla extract

Additional cinnamon for sprinkling (optional)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Prepare the Peach Filling: In a large mixing bowl, combine the sliced peaches, 1 cup of sugar, cinnamon, lemon juice, cornstarch, and vanilla extract. Toss everything together until the peaches are well coated. Let them sit for about 10 minutes to release their juices.

Prepare the Topping: In another bowl, whisk together the flour, 1 cup sugar, baking powder, and salt. Gradually stir in the milk and melted butter until just combined. Be careful not to overmix; some lumps are okay.

Combine Filling and Topping: Pour the peach filling into a greased 9x13 inch baking dish, spreading it evenly. Then, carefully spoon the topping mixture over the peaches, ensuring even coverage.

Bake the Cobbler: Bake in the preheated oven for about 40-45 minutes, or until the topping is golden brown and a toothpick inserted in the topping comes out clean.

Add Some Extra Flavor: For an optional touch, sprinkle a little additional cinnamon over the top while it's still hot from the oven.

Serve: Allow the cobbler to cool slightly before serving. It’s delightful on its own or topped with a scoop of vanilla ice cream.
