Ingredients

1 cup rolled oats

1 cup coconut milk (canned or carton)

1/2 cup Greek yogurt (or dairy-free alternative)

1/4 cup shredded unsweetened coconut

2 tablespoons maple syrup (or honey)

1 teaspoon vanilla extract

1/2 teaspoon almond extract

1/4 teaspoon salt

Fresh fruit (banana slices, berries) for topping

Whipped cream (optional, for topping)

Additional shredded coconut for garnish

Instructions

In a large mixing bowl, combine the rolled oats, coconut milk, Greek yogurt, shredded coconut, maple syrup, vanilla extract, almond extract, and salt.

Stir thoroughly until all ingredients are well incorporated and oats are completely submerged in the liquid.

Divide the mixture evenly into individual jars or containers with lids.

Seal the jars tightly and refrigerate overnight (or for at least 6 hours) to allow the oats to absorb the liquid and soften.

The next morning, remove the jars from the fridge and give each a good stir.

Top with your choice of fresh fruit, a dollop of whipped cream, and a sprinkle of shredded coconut for garnish.

Enjoy your delicious Coconut Cream Pie Overnight Oats straight from the jar or transfer to a bowl!
