  • 1 cup pitted Medjool dates
  • 1 cup raw almonds
  • 1 cup unsweetened shredded coconut
  • ½ cup almond butter
  • ¼ cup honey
  • ¼ teaspoon sea salt
  • 1 teaspoon pure vanilla extract
  • ¼ cup coconut oil melted

Instructions

  • Soak the pitted Medjool dates in warm water for about 10 minutes, then drain.
  • In a food processor, combine soaked dates, raw almonds, shredded coconut, almond butter, honey, sea salt, and vanilla extract. Pulse until sticky.
  • With the processor running, drizzle in melted coconut oil and blend until fully incorporated.
  • Line an 8x8 inch baking dish with parchment paper and press the mixture firmly into the dish.
  • Cover with plastic wrap and refrigerate for at least 2 hours until firm.
  • Lift the mixture out using parchment edges and slice into bars.
