1 cup jasmine rice

1 cup coconut milk

½ cup water

¼ cup granulated sugar

½ teaspoon salt

1 teaspoon vanilla extract

½ cup shredded coconut (unsweetened)

2 tablespoons chopped fresh mint (optional, for garnish)

Instructions
 

Rinse the jasmine rice under cold water until the water runs clear to remove excess starch. Drain well.

    In a medium saucepan, combine the rinsed jasmine rice, coconut milk, water, sugar, and salt. Stir well to combine all ingredients.

      Bring the mixture to a boil over medium heat. Once boiling, reduce the heat to low, cover, and simmer for about 15-20 minutes, or until the rice is tender and most of the liquid is absorbed.

        Remove the saucepan from the heat and let it sit, covered, for an additional 10 minutes to allow the rice to firm up.

          Preheat your oven to 350°F (175°C).

            Fluff the cooked rice with a fork, then stir in the vanilla extract and shredded coconut until evenly distributed.

              Grease a 9x9-inch baking dish and spread the rice mixture evenly in the dish. Press down firmly with a spatula to compact it.

                Bake in the preheated oven for 25-30 minutes until the top is lightly golden.

                  Remove from the oven and let cool for about 10 minutes. Cut into squares or wedges.

                    Garnish with chopped fresh mint if desired and serve warm or at room temperature.
