Ingredients
  

  • 1 lb ground beef or Italian sausage
  • 1 medium onion finely diced
  • 3 cloves garlic minced
  • 28 oz crushed tomatoes
  • 4 cups chicken or vegetable broth
  • 2 cups uncooked pasta lasagna noodles, broken into bite-sized pieces
  • 2 tsp dried basil
  • 1 tsp dried oregano
  • ½ tsp red pepper flakes
  • Salt and freshly ground black pepper to taste
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil leaves or parsley for garnish

Instructions

  • In a large pot over medium heat, add the ground beef or Italian sausage and cook until browned.
  • Add the diced onion and minced garlic, sauté for 3-4 minutes until the onion is translucent.
  • Pour in the crushed tomatoes and broth, then add the broken lasagna noodles, dried basil, oregano, and red pepper flakes.
  • Season with salt and pepper, stir well, and bring to a boil.
  • Reduce heat to low and simmer for 15-20 minutes until the pasta is tender.
  • In a separate bowl, combine ricotta cheese with half of the shredded mozzarella and half of the grated Parmesan.
  • Ladle the soup into bowls and top with the cheese mixture, allowing it to melt slightly.
  • Sprinkle remaining mozzarella and Parmesan over each bowl and broil for a few minutes if desired.
  • Garnish with fresh basil leaves or parsley before serving.
