1.5 lbs boneless, skinless chicken thighs

2 tbsp olive oil

2 tbsp adobo sauce (from a can of chipotle peppers)

1 tsp ground cumin

1 tsp smoked paprika

1 tsp garlic powder

1 tsp onion powder

1/2 tsp dried oregano

1/2 tsp salt

1/4 tsp black pepper

Juice of 1 lime

Fresh cilantro, chopped (for garnish)

Marinate the Chicken: In a large bowl, combine the olive oil, adobo sauce, cumin, smoked paprika, garlic powder, onion powder, oregano, salt, pepper, and lime juice. Whisk until well blended. Add the chicken thighs to the bowl, ensuring they are thoroughly coated in the marinade. Cover and let marinate in the refrigerator for at least 30 minutes, or up to 2 hours for more intense flavor.

    Cook the Chicken: Preheat your grill or stovetop skillet over medium-high heat. Once hot, add the marinated chicken thighs and cook for about 6-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.

      Rest and Slice: Remove the chicken from the grill or skillet and let it rest for about 5 minutes. This helps retain the juices. After resting, slice the chicken into strips.
