Ingredients
  

4 cups fresh corn kernels (or frozen)

1 medium onion, chopped

2 cloves garlic, minced

2 medium potatoes, diced

4 cups vegetable or chicken broth

1 cup heavy cream

1 tablespoon olive oil

1 teaspoon smoked paprika

1/2 teaspoon cayenne pepper (optional)

Salt and pepper to taste

1 cup diced bell peppers (red, green, or yellow for color)

2 green onions, chopped (for garnish)

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.

    Add the minced garlic, smoked paprika, and cayenne pepper (if using) to the pot. Stir for another 1 minute until fragrant.

      Add the diced potatoes and bell peppers to the pot. Stir to coat the vegetables in the oil and spices.

        Pour in the vegetable or chicken broth, and add the corn kernels. Bring the mixture to a boil, then reduce the heat to a simmer. Cook for 15-20 minutes, or until the potatoes are tender.

          Once the potatoes are cooked, use an immersion blender to partially puree the chowder, leaving some chunks for texture. (Alternatively, transfer half of the chowder to a blender, blend until smooth, and return it to the pot.)

            Stir in the heavy cream and season with salt and pepper to taste. Allow to heat through for another 5 minutes.

              Serve hot, garnished with chopped green onions and parsley.
