8 oz whole wheat pasta (fusilli or penne)

1 cup fresh corn kernels (or canned if out of season)

1 cup cherry tomatoes, halved

1/2 cup diced red onion

1 cup diced bell peppers (preferably a mix of colors)

1 cup cooked black beans, rinsed and drained

1/4 cup fresh cilantro, chopped

1/2 cup feta cheese, crumbled (optional)

1/4 cup olive oil

2 tablespoons lime juice

1 teaspoon garlic powder

1 teaspoon chili powder

Salt and pepper to taste

Instructions
 

Cook the Pasta: In a large pot of salted boiling water, cook the whole wheat pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Vegetables: In a large mixing bowl, combine the fresh corn, cherry tomatoes, red onion, bell peppers, black beans, and chopped cilantro. Mix well to combine.

      Make the Dressing: In a small bowl, whisk together the olive oil, lime juice, garlic powder, chili powder, salt, and pepper until well combined.

        Assemble the Salad: Add the cooled pasta to the vegetable mixture. Pour the dressing over the top and gently toss until everything is well-coated. If using, sprinkle the feta cheese on top and give it another gentle toss.

          Chill and Serve: Cover the salad with plastic wrap or transfer it to an airtight container. Chill in the refrigerator for at least 30 minutes to let the flavors meld together. Serve cold, and enjoy!
