Ingredients
  

2 cups cottage cheese (preferably low-fat or full-fat)

2 medium apples, diced (preferably Granny Smith or Honeycrisp)

1/2 cup chopped walnuts or pecans

1/4 cup dried cranberries or raisins

2 tablespoons honey or maple syrup (adjust to taste)

1 teaspoon ground cinnamon

1 tablespoon fresh lemon juice

Fresh mint leaves for garnish (optional)

Instructions
 

In a large mixing bowl, combine the cottage cheese, diced apples, chopped walnuts or pecans, and dried cranberries or raisins.

    In a small bowl, whisk together the honey (or maple syrup), ground cinnamon, and lemon juice. This will be your dressing.

      Pour the dressing over the cottage cheese mixture and gently fold it in until everything is well coated.

        Taste and adjust sweetness by adding more honey or maple syrup if desired.

          Chill the salad in the refrigerator for at least 30 minutes to allow the flavors to meld together.

            Before serving, give it a gentle stir, and garnish with fresh mint leaves if using.
