Ingredients
  

1 cup of cottage cheese (preferably low-fat)

1 large cucumber, diced

1 small red onion, finely chopped

1/4 cup of fresh dill, chopped (or 1 tablespoon dry dill)

1/4 cup of cherry tomatoes, halved

1 tablespoon of olive oil

1 tablespoon of apple cider vinegar

Salt and pepper to taste

Optional: a squeeze of fresh lemon juice, toasted pumpkin seeds for garnish

Instructions
 

In a large mixing bowl, combine the cottage cheese and diced cucumber.

    Add the finely chopped red onion, fresh dill, and halved cherry tomatoes to the bowl.
