Ingredients
  

2 cups cottage cheese (full-fat or low-fat)

1/2 cup marinara sauce (or pizza sauce)

1 cup bell peppers, diced (red, green, or yellow)

1/2 cup mushrooms, sliced

1/2 cup cherry tomatoes, halved

1/2 cup shredded mozzarella cheese

1/4 cup pepperoni slices (optional)

1 tsp Italian seasoning (oregano, basil, thyme)

Salt and pepper to taste

Fresh basil leaves for garnish (optional)

1/4 cup grated Parmesan cheese (optional)

Instructions
 

Preheat your oven to 400°F (200°C).

    In a large mixing bowl, combine the cottage cheese, Italian seasoning, a pinch of salt, and pepper. Mix well until combined.

      In a baking dish, spread the cottage cheese mixture evenly across the bottom to form a base.

        Pour the marinara sauce over the cottage cheese layer, spreading it evenly.

          Layer the diced bell peppers, sliced mushrooms, and halved cherry tomatoes over the sauce.

            Sprinkle the shredded mozzarella cheese generously over the top.

              For added flavor and some meatiness, arrange the pepperoni slices over the cheese (if using).

                If desired, sprinkle grated Parmesan cheese on top for an extra cheesy experience.
