  • 1 medium onion finely diced
  • 2 cloves garlic minced
  • 1 medium bell pepper diced
  • 2 medium carrots diced
  • 2 stalks celery diced
  • 1 medium zucchini diced
  • 1 can 15 oz black beans, rinsed and drained
  • 1 can 15 oz kidney beans, rinsed and drained
  • 1 can 15 oz corn, drained
  • 1 can 14.5 oz diced tomatoes, including juice
  • 4 cups vegetable broth
  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • ½ teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • Fresh cilantro chopped, for garnish
  • Optional: Slices of avocado and lime wedges for serving

Instructions

  • Heat olive oil in a large pot over medium heat.
  • Add diced onion and sauté for 3-4 minutes until translucent.
  • Stir in minced garlic and cook for an additional minute.
  • Add bell pepper, carrots, celery, and zucchini; sauté for 5-7 minutes.
  • Mix in black beans, kidney beans, corn, and diced tomatoes with juice.
  • Pour in vegetable broth and add chili powder, cumin, smoked paprika, salt, and pepper.
  • Bring to a gentle boil, then reduce heat and simmer for 20-25 minutes.
  • Taste and adjust seasoning if needed.
  • Serve hot, garnished with fresh cilantro and optional avocado and lime.
