5 lbs (about 680g) boneless, skinless chicken breasts

1 medium onion, finely diced

3 cloves garlic, minced

3 medium carrots, peeled and sliced

2 ribs celery, finely chopped

4 cups (960ml) chicken broth (preferably low sodium)

1 cup (240ml) heavy cream

1 cup frozen peas

1 teaspoon dried thyme

1 teaspoon dried rosemary

Sea salt and freshly cracked black pepper, to taste

2 tablespoons olive oil

2 tablespoons cornstarch (optional, for thickening)

Fresh parsley, finely chopped (for garnish)

Instructions
 

Sauté the Vegetables: Heat the olive oil in a large skillet over medium heat. Once hot, add the diced onion, minced garlic, sliced carrots, and chopped celery. Sauté the mixture for approximately 5 minutes or until the vegetables begin to soften and the onion becomes translucent.

    Prepare the Chicken: Season the boneless, skinless chicken breasts with sea salt and freshly cracked black pepper. Place the seasoned chicken in a 6-quart crockpot.

      Combine Ingredients: Transfer the sautéed vegetable mixture to the crockpot. Pour in the chicken broth and sprinkle in the dried thyme and rosemary. Gently stir everything together to ensure the ingredients are well mixed.

        Cook: Cover the crockpot with its lid and set it to cook on the low setting for 6-8 hours or on high for 3-4 hours, until the chicken is thoroughly cooked and tender.
