Ingredients

1 cup cottage cheese (full-fat for creaminess)

1 cup lump crab meat (fresh or canned, drained)

1/4 cup diced cucumber

1/4 cup cherry tomatoes, halved

1/4 cup finely chopped red onion

2 tbsp fresh dill, chopped (or 1 tbsp dried dill)

1 tbsp lemon juice (freshly squeezed)

1 tbsp olive oil

Salt and pepper, to taste

Optional: 1 avocado, sliced for topping

Optional: Toasted pita chips or whole grain crackers for serving

Instructions

In a medium mixing bowl, combine the cottage cheese and crab meat. Gently fold them together to avoid breaking the crab lumps.

Add in the diced cucumber, cherry tomatoes, red onion, and fresh dill. Stir gently until well combined.

Drizzle in the lemon juice and olive oil. Season the mixture with salt and pepper to taste, then give it another gentle stir.

If using avocado, slice it and set aside. This can be served alongside or on top of the cottage cheese bowl.

Spoon the crab and cottage cheese mixture into serving bowls. If desired, top each bowl with sliced avocado.

Serve immediately, with toasted pita chips or whole grain crackers on the side for a delightful crunch.
