1/4 cup green onions, finely chopped

1 tbsp Dijon mustard

1 tsp Old Bay seasoning

Salt and pepper to taste

For the Cheddar Bay Biscuit Dough:

1 tbsp baking powder

1/2 tsp garlic powder

1/2 tsp salt

1/4 tsp cayenne pepper (optional)

1/2 cup cold unsalted butter, cubed

1 cup shredded sharp cheddar cheese

3/4 cup buttermilk

For the Lemon Butter:

1/4 cup unsalted butter, melted

Zest of 1 lemon

1 tbsp lemon juice

1/2 tsp garlic powder

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Crab Stuffing: In a mixing bowl, gently combine the crab meat, cream cheese, mayonnaise, green onions, Dijon mustard, Old Bay seasoning, salt, and pepper. Mix until well incorporated. Set aside.

Make the Biscuit Dough: In a large bowl, whisk together the flour, baking powder, garlic powder, salt, and cayenne pepper. Cut in the cold butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs. Gently fold in the shredded cheddar cheese.

Combine Wet Ingredients: Pour the buttermilk into the dry ingredients and mix until just combined; do not overmix. The dough should be slightly sticky.

Fill the Biscuits: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper. Using a spoon or ice cream scoop, take a portion of the biscuit dough and flatten it slightly in your hand. Place about a tablespoon of the crab mixture in the center and fold over the edges of the dough, sealing it well. Shape into a ball and place on the prepared baking sheet.

Bake the Biscuits: Repeat the filling process until all the dough and filling are used. Bake in the preheated oven for 12-15 minutes or until the biscuits are golden brown.

Prepare the Lemon Butter: In a small bowl, combine the melted butter, lemon zest, lemon juice, and garlic powder. Mix well.

Serve: Once the biscuits are baked, remove them from the oven and brush them generously with the lemon butter. Garnish with fresh parsley before serving.
