12 oz fettuccine pasta

1 lb chicken breast, cut into bite-sized pieces

2 tablespoons Cajun seasoning

1 tablespoon olive oil

1 medium onion, diced

3 cloves garlic, minced

1 red bell pepper, sliced

1 green bell pepper, sliced

1 cup heavy cream

1 cup chicken broth

1 cup grated Parmesan cheese

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the Pasta: In a large pot, bring salted water to a boil and cook the fettuccine according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of the pasta water.

    Season the Chicken: In a bowl, toss the chicken pieces with Cajun seasoning until well-coated.

      Sauté the Chicken: In a large skillet, heat olive oil over medium-high heat. Add the seasoned chicken and cook until golden brown and cooked through, about 5-7 minutes. Remove the chicken from the skillet and set aside.

        Sauté Vegetables: In the same skillet, add diced onion and sauté until translucent, about 3 minutes. Stir in garlic and cook for another minute until fragrant. Add the sliced bell peppers and cook until they soften, about 4-5 minutes.

          Make the Sauce: Reduce heat to medium. Pour in the chicken broth and heavy cream, stirring to combine. Allow the mixture to simmer for about 3-4 minutes, then stir in the grated Parmesan cheese. Mix until the cheese melts and the sauce becomes creamy.

            Combine Everything: Add the cooked chicken back to the skillet along with the drained fettuccine. Toss everything together to coat the pasta and chicken in the creamy sauce. If the sauce is too thick, add a bit of the reserved pasta water until the desired consistency is reached.

              Season and Serve: Taste and adjust seasoning with salt and pepper as needed. Garnish with chopped fresh parsley before serving.
